Using a large mixing bowl, add natural peanut butter, unsweetened cocoa powder and melted butter and combine well.
Add powdered Erythritol; and combine well into other ingredients.
Add your shredded unsweetened coconut and combine well into other ingredients.
Using a spoon, small ice cream scoop or a cookie scoop. Evenly scoop out your mixture onto a parchment lined cookie sheet. You should end up with 10 - 15 haystacks, depending on the size.
Place in freezer for 25 - 30 minutes. Remove from freezer, the haystacks can be placed in a zip lock bag.
