Hollandaise Sauce
  1. Add egg yolks and lemon juice to a small saucepan and whisk until smooth. Turn heat to low.
  2. Cut butter into pats and add one or two at a time, melting the butter slowly and thickening the sauce. Stir constantly.
  3. When the butter is fully melted, removed from heat and set aside.
Eggs Benedict
  1. Split the English muffins in half and toast them.
  2. Place 2 toasted halves of muffin on a plate and top each with a slice of warmed canadian bacon, and a poached egg.
  3. Served with Hollandaise sauce.
