  1. Mix potatoes, half and half, butter and sugar.
  2. When the potato mixture has cooled to room tempurate, add flour in ¼ cup portions until the dough forms a nice soft ball. It will be sticky.
  3. Flour a dish towel or rolling cloth and rolling pin cover, for rolling out the dough.
  4. create a small ball of dough by rolling it between your hands.
  5. Place the ball on a floured cloth and roll out very thin.
  6. Use a flat stick to roll the thin dough loosely onto the stick for transport to the griddle.
  7. Use a hot griddle to fry the lefse. Cook until lightly browned on each side.
  8. Transfer to a towel and keep covered to retain moisture while cooking the rest of the dough.
  9. Serve with butter and sugar or jams.
  10. Store in the refrigerator.
